You're going to be running quite a bit wider wheel and then the spacer/adapter is going to make them stick out even further.

265/35/19 are actually 1 inch larger diameter than 265/30/19 which is about 12mm extra sidewall. The 35 is a ratio - not a measurement of mm of sidewall. Your speedo will be off by about 4% compared to the stock diameter.
I’m not surprised. You went with over 1 inch narrower squishy winter tires. It’s going to suck.
This is a big part of why I wanted to go with 265 all seasons and the exact same width and offset as stock. It still feels great to drive.
Michelin PS4S tires suck in cold temps. If I had the choice of damaging winter tires by putting extra miles on them or crashing my car I'd choose damaging winter tires.
You will find that all seasons are significantly better than the stock tires in the rain in all temperatures.
Those are very wide for stock wheels. I wouldn't run that wide in the winter strictly for the reason of not throwing up extra road debris on the side of the car.

Very few people with an FL5 have reported issues with grinding gears. It makes me think it’s a driver issue. I encourage you to research the best techniques for shifting into each gear. I had to relearn how to drive manual with my AP1 S2000 and have yet to have any issues with my FL5.
