I can't help but think it's not too late for Acura. They could easily push a software update to put the option in a menu. I don't see that happening, but one can hope.
What you are missing is that the auto intermittent function is completely schizophrenic. It takes inputs from both the speed and rain sensors to calculate the frequency of sweep, and a slight change in either of those can result in a drastic change in the wipers.

No, you cannot. To cancel the auto function of the headlights, you have to turn on the parking lights, and to cancel the auto intermittent wipers, you have to have the wipers on low, completely defeating the intermittent function.
