I switched to the OE Copper wheels months ago. I did notice from time to time when the car sits cold after starting the engine the TPMS will show a - on the monitor to a random wheel (maybe 2) but will all show the actual tire pressure after driving it a min or two. Is that normal ? I dont recall that happening w the OE black wheels ... I wasnt sure if removing the sensors after reinstalling them back may have disrupted anything.

Yes totally normal, a radio signal is sent from the tire pressure monitoring system inside the wheel to the radio sensor which has to be processed. It also seems that there is a delay that is intentional until the tires roll a little bit before it bothers to report to you what the pressure actually is.
