Are you going to separate the mount from the original spare tire pan what was cut out with it first or just glue it in with that still attached? If it were me, I'd cut the old spare tire pan off as best I could and just glue the mount in place.

I would do a full hood & fenders, the seem across the hood is just unsightly. In addition to your list, the A pillars should be done as well as the leading edge of the roof. Once that's all done, you probably may as well have wrapped the entire car.
