rattling noise. Please help me figure this shit out.

So to give some insight, I can re-create the noise best as I turn on the AC low and after I turn it off, the rattling stays going, and it disappears as I engage the clutch

sounds like gear rattle in the transmission. If the clutch is depressed, and it's quiet, and when you let it out in neutral, the trans spins up inside and that's what you hear. It's louder than what I'd ever consider normal for a new car.
